On joining Young’s early 2015, one of my first challenges was to introduce apprenticeships for our chefs that was built around the way we do business. PLG ensured they worked with our food development team to create a programme that set all our chef apprentices up for success. At no time did we feel we were being made to fit a certain way of working, we had input into the programme and it fitted our needs perfectly. The support PLG give us is second to none and we sometimes forget they are an external company providing a service. Young’s in partnership with Performance Learning Group (PLG) are investing in the future of fresh food by launching the “Young’s Chef Academy”. Chris Knights, group executive chef at Young’s Pubs and Geronimo Inns, feels strongly that developing and recognising chefs throughout the company will help address the skills shortage and employee retention. By delivering apprenticeships in both Professional Cookery Level 2 and Hospitality Supervision & Leadership Level 3 to chefs across a number of London based Young’s and Geronimo sites, alongside delivering a monthly master class will allow the lucky and dedicated chefs to gain the full range of knowledge and practical experience, to put the skill back into traditional cooking.
